Zion National Park

I was in St. George this weekend and was able to go to Zion National Park. It was beautiful! The contrast of the red dirt and the green foliage was striking. I also was able to spend a lot of time with my family, which always leaves me feeling buoyed up. We hiked up to the Emerald Pools and it was so beautiful. There were a ton of people there that didn’t speak English–I was really surprised! Anyway, I hope you can enjoy some of the pictures I took!

Spring is finally here! The tulips are budding, and it rained this morning and walking around campus smelled like plants. Spring truly is one of my favorite seasons.

I am seriously holding out hope that this weekend is going to go well. I was at the bank today and the teller said, “any plans for this weekend?” And I, in a bitter tone, immediately replied “no.” Then I remembered that I do have plans and I’m just so used to not having plans (and apparently being bitter about it), that my trained response to that question came out immediately in the negative.

Also, I helped a little earthworm back to the safety of the dirt from the sidewalk today. I felt like a child, bent down poking at a worm with a stick until it went the way I wanted it to go. Also also, I’ve been seriously contemplating chopping off my hair for a couple weeks now! I’M JUST SO NERVOUS. I probably won’t do it. I don’t know. I might…

A Hair Trick

I learned a new and nifty trick for curling hair with a flat iron: the more hair you use for each curl results in bigger curls. If that’s not any news to you, then forgive me for just learning about this and being so out of touch. AND HERE I WAS, about to buy one of those super wide irons. Don’t even need one. Tricks of the trade, my friends.

Twice Baked Cheddar Broccoli Potatoes

Ingredients

6 medium to small potatoes
1 1/2 cup shredded cheddar cheese
1/4 cup milk
1 cup finely chopped broccoli florets
Salt & pepper to taste
**Sour cream & butter for topping**

Instructions

Bake the potatoes at 400 degrees F for 50 minutes
Slice in half, long ways
Carefully scoop out the middle and put the skins on a baking sheet
Put the potato meat into a bowl
Mix other ingredients, really mash ‘em up well
Spoon back into skins
Bake at 400 degrees F for 15 more minutes
Serve with sour cream and butter

YUM – am I right? It was a great recipe, turned out pretty yummy! I have to say I probably won’t do it again very often, because you could just bake the potatoes and serve with the broccoli and cheese separately–and that would save like 20 minutes. But it is great for presentation!

Green

I just realized I posted this without any text, so a lot of people got emailed this with…no text, just pictures. Sorry.

I was recently told that green “is my color.” I think I’ll wear green more.

Today I’m not going to class and spending the day in Salt Lake, with my friend Chelsea. She came and visited me while I was living in LA too. I’m really really excited.

Avocado Tomato Provolone Sandwich


This is one of my very favorite foods. I love avocados SO much! I was spoiled when I lived in California because there was an avocado tree outside where I lived. I love tomatoes. I love bread. Add some cheese, S&P and voila! Instant favorite. The thing I love the most is that it really lets all the ingredients shine. You don’t hide anything behind anything. It’s just food heaven.
